Instructions
  1. In a small bowl, combine the ½ cup white sugar, cornstarch and ground cinnamon. Pour into the bottom of the crock pot.
  2. After draining the peach slices, add the peaches and lemon juice to the crock pot. Stir to combine until the sugar mixture is liquid. (NOTE: Save the peach juice for making other recipes such as a sweet and sour sauce.)
  3. Set the slow cooker (crock pot) to LOW and cook for 4 to 5 hours.
  4. Turn the slow cooker to HIGH.
  5. Next, to make the dumplings. In a large bowl, and with a wire whisk, combine the flour, 1 Tablespoon of white sugar, ground cinnamon, baking powder, and salt.
  6. Add the softened unsalted butter and cut in with a pastry blender or your fingers until the mixture resembles fine crumbs.
  7. Add the milk and with a fork combine until it pulls away from the sides of the bowl.
  8. Drop by teaspoonful on the top of the hot fruit. Cover, and bake for 40 minutes or until a toothpick inserted in the center comes out clean.
  9. Unplug, replace the cover and let stand for 1 hour. This allows the peach syrup mixture to set up more thickly.
  10. Serve it hot or cold. Can be served with cream, whipped cream or even ice cream. Enjoy!
