Slow Cooker Rhuberry Cobbler Creation

  1. In a large bowl combine the diced rhubarb, sliced strawberries and the 1 cup of white sugar. Set it aside for 15 minutes. About 8 minutes, take a moment and stir to combine and release some more of the fruit juices into the bowl.
  2. Grease the inside of the slow cooker with some unsalted butter.
  3. In a medium bowl combine the brown sugar, ground cinnamon and 1/8 cup unsalted butter, softened. You can use a fork to blend it all together quite easily.
  4. Place 1 cup of the dry white cake mix on the bottom of the greased slow cooker. Do not pack the cake mix into the measuring cup. Lightly fill the cup.
  5. Next, layer 5 cups of the fruit mixture on top of the cake mix.
  6. Place another 1 cup of the dry white cake mix on top of the fruit. Again, do not pack the cake mix into the measuring cup.
  7. Spread the remaining fruit and juices on top of the cake mix.
  8. Sprinkle the remaining white cake mix over the top of the fruit.
  9. Lastly, drop small clumps of the brown sugar blend all over the top of the cake mix.
  10. Cover the slow cooker. Set the temperature to HIGH and cook for 2 hours.
  11. Remove the lid and continue to cook for another 15 minutes.
  12. Great served hot or cold. Personally I really enjoyed it more cold the next day. But everyone will have different preferences.
