Ingredients
Instructions
  1. Shred the green cabbage into thin strips. Place into a large bowl or container with lid.
  2. Cut the onion into thin strips and separate. Add to the cabbage.
  3. Cut the sweet peppers, colors of your choice, to equal 1 cup, into thin strips. Add to the cabbage mixture.
  4. In a large glass 2-cup measuring cup, combine the vinegar, vegetable oil, white sugar, celery seed, salt, and pepper.
  5. Microwave the glass measuring cup and its contents on high for 2 minutes or until doing a rolling boil.
  6. Carefully remove the measuring cup from the microwave. Stir the contents.
  7. Pour the liquid over the cabbage mixture in the bowl. Stir to combine all ingredients. Cover and refrigerate.
  8. THE NEXT DAY–Stir the cabbage coleslaw mixture and return to the refrigerator.
  9. READY TO EAT AFTER 48 HOURS. This coleslaw is best when left longer to marinate. And it will keep in the refrigerator for up to 2 weeks.
