Ingredients

  1. Preheat the oven to 350 degrees Fahrenheit. Place the rack in the middle.
  2. Grease a 12 x 9 glass baking dish.
  3. Dice the rhubarb into small pieces until you have 4 cups.
  4. Arrange the diced rhubarb in the bottom of the greased baking dish.
  5. Sprinkle salt over the rhubarb.
  6. Sprinkle the 1 cup of white sugar all over the top of the Rhubarb
  7. Set the baking dish aside.
  8. In a large bowl, with a pastry blender, combine the flour, rolled oats, ground cinnamon, brown sugar, and softened butter until is resembles crumbs.
  9. Pour this mixture evenly over the top of the rhubarb. Gently pat into place.
  10. Place on the middle oven rack and bake at 350 degrees Fahrenheit for 45 minutes.
  11. Remove from the oven and allow to cool for at least 10 minutes before cutting into squares and serving.
Recipe Notes

This is an easy dessert to make and a delight to enjoy.

You can serve it warm with cream poured over it, or even a scoop of ice cream.  Another option is to eat it cold right from the refrigerator just as it is.
