Pantry Quick Chocolate Cookies

  1. In a large bowl, and with a wooden spoon, combine the rolled oats, flaked coconut, and cocoa powder. Set aside.
  2. In a medium saucepan, put the white sugar, milk, vanilla extract, unsalted butter and cocoa powder.
  3. With the wooden spoon, and over medium heat, continue stirring as the butter melts. Constantly stirring, to prevent the mixture from burning, bring the melted, combined mixture to a gently rolling boil. Boil for 5 minutes. As you lift the wooden spoon up, if the mixture still runs off the spoon, it is not cooked enough. If the mixture clings to the spoon before dripping off, it is just about right. Remove from the heat.
  4. Quickly dump the rolled oats mixture from the bowl into the sauce pan. Just as quickly, use the wooden spoon to combine all ingredients.
  5. With 2 teaspoons, quickly drop the cookie mixture by teaspoonfuls on the baking sheet, lined with parchment paper or not. Work fast as these cookies will set quickly. Once the cookies have set, a couple of minutes, they are ready to enjoy!
