  1. Dice the vegetables. Place in a bowl and set aside.
  2. Cut the cooked beef roast into cubes or strips.
  3. In an electric frying pan, combine the beef pieces, beef stock, soya sauce and the coconut curry spice. Stir to combine and set the temperature to 375 degrees Fahrenheit. Simmer for 5 minutes.
  4. Once the meat is simmered, add the diced vegetables. Continue to cook for another 10 minutes or until desired doneness.
  5. During this time the liquid will condense down. If desired you may choose to thicken it up. To do that, in a small cup combine the cornstarch and water until blended. Add the cornstarch water blend to the beef veggie mixture. Stir to combine and thicken the remaining sauce.
  6. Serve over a bed of brown rice and sprinkle a ΒΌ teaspoon of sesame seeds on top.
