Leftover Beef Coconut Curry Stir Fry
Here is a quick and easy way to use up some leftover beef roast in your fridge.
- put a pot of brown rice on to cook as your side dish,
- prep some vegetables,
- cut the beef into chunks or strips
- combine in an electric frying pan with a few seasonings
And within half an hour you can have dinner on the table. Trust me, I know.
The night I decided to make this was crazy busy at Free Stuff 4 Daily Needs.
It all started with our 3 pm appointment. Furniture to be delivered didn’t show up. We waited as long as possible, however, we had to go and deliver a futon couch at 4 pm.
We returned home just after 4:15 pm. And I thought, great! Our next appointment isn’t until 7 pm. We have to pick up a truckload of items for our upcoming Christmas Giveaway event.
I pulled the leftover roast beef from the fridge, and a few veggies. Next I grabbed a pot and started cooking some brown rice.
I quickly diced the vegetables and set aside in a bowl. Next, I was just beginning to cut the roast beef when—yup, now that it was 4:30 pm, our previous 3 pm “no show” appointment—showed up.
So, I turned off the rice.
Quickly Barry and I went outside to help unload the truckload of furniture that was being donated. Before we were done, the family was able to also grab a few items they needed such as a small freezer and a pantry cupboard.
While we were still unloading their items, another family stopped by to pick up a few things they needed too. The men from both families worked together to finish unloading and loading the trailer.
This allowed me a moment to talk with both women and grab a few more items each of them needed.
Finally, both families were on their way. As the family with the trailer were pulling away, a car slowed down and yelled up our driveway asking if we take pillows.
We answered yes. She said, “Great. I’ll drop them off tomorrow.”
Barry and I closed up the garage and came back into the house.
Dinner Prep Started Once Again
I started to cut the roast beef once again. Suddenly I heard a car door close. I went to the front door to see the woman from a few minutes earlier setting pillows outside on the front steps.
So I went outside and spoke with her for a few minutes. Then I returned inside with 5 bags of pillows and put them in our sorting/storage area for fabric items.
Whew! Now, can I get dinner on?
Well, I checked the brown rice to discover that it was almost done, despite having the burner turned off for the past ½ hour. So, I turned to heat back to medium heat for an additional 10 minutes to finish absorbing the remaining water. Then I was able to turn off the burner and remove the pot from the heat.
Back to cutting the beef, finally. It is now 4:45 pm.
So, this recipe quickly came together, and Barry and I were eating dinner by 5:15 pm.
See, leftovers mixed with new ingredients, all on the table in half an hour.
