Eggplants are not as common in our North American kitchens as its relatives the hot/sweet peppers, potatoes, and tomatoes.
However, you should add eggplant to your menu more often. Today’s simple recipe is a great place to get started. Expand your taste horizons and try something new this week. Barbecue some up with your steaks or burgers and enjoy some grilled eggplant with fresh herbs.
The eggplant is commonly known by 3 names:
- British English–call it by the French name “Aubergine”
- It is called “Brinjal” in South Africa and South Asia.
- And most commonly referred to as “Eggplant” in North America, Australia and New Zealand.
A part of the “nightshade” family of plants, it is a relative of tomatoes, potatoes, and pepper plants.
The eggplant fruit that we consume is also classified as a “berry” by botanists. Similar to raspberries, strawberries and the such. Why? Because of the numerous small soft seeds that are contained in the inner white flesh.
Eggplants also come in a variety of colors, although most of you will think of the dark purple ones. However, you can also use white or lavender varieties as well.
You should store your eggplant in the refrigerator, but you also need to cook it up within a few days. If left too long, they tend to become bitter tasting. So if you did pick some eggplant up from the reduced price rack, best idea is to cook it up today or tomorrow.
You don’t need to peel the eggplant unless the skin is particularly thick.
This recipe and many others for eggplant do require you to salt the eggplant first. Salting the eggplant is a process that draws out excess moisture and a certain amount of bitterness that may be contained inside.

Using fresh herbs from your garden or store gives the best flavor, however, you can use dried herbs if you have that handy. You don’t need as large a quantity as dried herbs are more concentrated in flavor.
