Fresh Rhubarb Cinnamon Rolls
Do you have this particular “free” food source in your yard? It is commonly known as either Rhubarb or even Pie Plant. Not originally a native plant in Canada, having been imported by our European ancestors many, many years ago, it has flourished well. If you yourself do not have a patch in your yard, you probably know someone who does.
Although technically a vegetable by scientific standards, it is usually treated more as fruit. Rhubarb is a good source of Vitamin A, C, and even Potassium.
The vitamins and the fact that this is a “free” food source that returns year after year, gives you several good reasons to use this vegetable more often. There are many ways to use it, including this recipe, Fresh Rhubarb Cinnamon Rolls
Typically you may be more familiar with Rhubarb being used in pies such as Strawberry/Rhubarb Pie or even a Rhubarb Sauce.
Today, we would like to share you a new way to serve up another familiar treat. Taking a traditional Cinnamon Roll and adding some fresh diced rhubarb. Combined with some sugar free strawberry jello is also a nice change. And by using additional sweeteners such as Stevia/Erythritol and Sucralose, this will reduce the refined sugar content.
However, this recipe still uses a regular wheat flour, baking powder biscuit mix. So even though it does not contain yeast, for those of us who are yeast sensitive—it is not gluten free.

There has been a disturbing trend of late. People who misunderstand the many uses of Rhubarb have been getting rid of it from their gardens. See if you can, get some and plant in yours. As a perennial plant that continues to grow year after year, we shouldn’t look upon it so lightly.
Although you cannot harvest it the first year that you have planted it. That is because you have to allow it to root well. Then you will have it for decades to come.
As Barry and I have been dealing with the topic of Food Insecurity, we believe that we should start to look around us for more ways to find “free” food outside our door. And Rhubarb is one such source.
