Creamy Wild Rice Mushroom Soup

By pulling your crock pot out of the cupboard and having it do the cooking, is a time saver too. You can go and explore the beautiful fall colors instead of standing over the stove, stirring the soup pot.
It also serves as a complete meal because of the large amounts of natural source protein contained in the wild rice. This recipe will suit you indeed, as it is more vegetarian friendly. Depending on your vegetarian strictness, you may need to omit the small amount of cream to make it completely vegetarian.
Adjust To Reduce Carbohydrates
The wild rice is both filling and full of protein. Meanwhile, the finely minced and chopped vegetables give the soup a more consistent flavor throughout. What’s more, some its “creaminess” comes from pureed cannellini beans, rather than a larger amount of dairy products. Although if you need to reduce your carbohydrate intake, omit the cannellini beans and increase the amount of cream instead.
If you are as carbohydrate sensitive as I am, I reduce it further by only using wild rice. However, when using a wild rice blend it is both cheaper and a whiter color. By only using wild rice, the soup does tend to turn more of a purple color once the cream is added. But the benefit is the carbohydrate count is reduced and the protein count is increased.

Wild Rice is not actually a true rice, but rather the seeds from a water (aquatic) grass. It is most commonly found in parts of Northern Ontario and Manitoba in Canada. So, if you are looking for ways to start adding more Canadian natural food sources to your meals, add wild rice more often.
