Creamy Sweet Potatoes With Walnuts
Sweet potatoes are a great meal time alternative to the traditional white potatoes. Although sweet pototoes are actually native to Central and South America, since 1999 they have been grown commercially in Ontario. Not only are sweet potatoes lower in calories, they are also:
high in fiber,
a great source of Vitamin A,
and higher in Vitamin C too.
In this recipe sweet potatoes are blended with cream cheese, thyme, cinnamon and allspice. The topping of Canadian Black Walnuts add the finishing touch and crunchy topping.
Harvest Your Own Black Walnuts
This time around you may have to buy some walnuts from your local supermarket. However, what about harvesting your own?
We have a Black Walnut tree growing in our front yard. It must be about 90 feet in height.
Black Walnut trees can be found growing throughout several regions of Canada. You may have one growing in your neighborhood and not even realize it. It took a few years before I realized we had one growing in our own yard.
During the fall season, this tree is a busy center of harvesting. Squirrels are continually going up and down grabbing the round green balls off the ends of the branches.
Did you know that the squirrels will not grab any of the walnuts that have fallen on the ground? They won’t even pick up any that they accidentally dropped either. So, the squirrels harvest the walnuts on the top of the tree. I harvest the walnuts that are on the ground. Seems like a fair trade. I certainly can’t climb 90 feet in the air to grab the ones in the tree. Let the squirrels have them.
Black Walnuts have earned their name for a good reason. Trying to peel the green skin off of them will turn your hands literally black unless you wear very thick protective gloves. I’ve heard that some people will resort to placing the walnuts on the driveway and then drive over them with their car in order to crack their shells.
But once you have, Black Walnuts are rich in flavor, good fats, protein, magnesium, phosphorus, copper, and manganese.
