Coconut Cream Pie is such a delightful dessert, however, not very low in carbohydrates in its traditional form. While trying to find healthier alternatives to much loved favorites, I put this little treat together. After all, we want to feel EMPOWERED, not deprived.
This Coconut Cream Cheesecake Cloud recipe is both low in carbs and delicious. Unlike the traditional pie that is made with milk instead of the cream, this recipe actually uses real cream. Cream is in both the 35% whipping cream (heavy cream) and the cream cheese.
At only 3.5 grams of Net Carbohydrates per 1/4 cup serving, you can enjoy guilt free. Eaten slowly and savored, you will love the gently dissolving coconut clouds in your mouth. The infusion of a mild vanilla taste is just enough to have you swear it is the real thing.
Use unsweetened flaked coconut if you desire a more chewy variation. The chewing action also helps to curb your cravings as you enjoy each delightful spoonful. You can also use a finer grain of coconut if you prefer.
This is sweetened with a Stevia/Erythritol Blend instead of sugar or sucralose sweeteners. Stevia/Erythritol Blend is only 10 calories for every 100g and when it comes to carbohydrates, it is 100% sugar alcohols. Anyone familiar with Keto or Atkins type diets already know that you don’t need to count sugar alcohols in your final carbohydrate count.
