  1. In a large bowl, place 1 cup of cornmeal.
  2. Add the coconut flour to the cornmeal.
  3. Add the salt and baking soda.
  4. Take a wire whisk and mix all these dry ingredients together until well combined. If you don’t have a wire whisk you can also just use an ordinary fork to mix everything.
  5. In a small bowl, with a fork, lightly beat an egg.
  6. Add the beaten egg to the cornmeal mixture. Finally add the water. Continue to whisk it all together until combined. Set aside while you get the pan ready.
  7. Heat your favorite frying pan or griddle. Grease it to keep your pancakes from sticking. Once your pan is hot, quickly whisk the pancake mix once again. Pour ΒΌ cup of the batter for each pancake into your lightly greased hot pan. Bake until golden brown on both sides like you would any type of pancake.
  8. Serve hot with your favorite topping. Excellent to serve along some crispy slices of bacon or some breakfast sausages.
